1. Dough Preparation
The process begins with precise mixing to ensure the dough is uniform, elastic, and properly hydrated. Achieving optimal gluten development at this stage is critical for the final texture of the buns and rolls.
2. Dough Dividing and Rounding
The bulk dough is portioned into equal pieces using high-precision dividing machinery. These portions are then rounded into uniform balls to ensure consistent baking results and professional presentation.
3. Resting / Intermediate Proofing
Rounded dough balls undergo a short resting period. This stage allows the gluten to relax, making the dough more pliable and easier to handle during the final shaping stages.
4. Final Shaping
The dough is molded into its specific final form:
- Hamburger Buns: Flattened to achieve the iconic round shape.

5. Final Proofing
